Banana protein waffles

A delicious banana waffle recipe that is perfect as a post-workout meal since it contains a good amount of both protein and carbs.

This is NOT a crispy waffle, it’s more like a pancake: soft and cakey. It is dairy-free, grain-free, gluten-free and added sugars free, so thoroughly healthy and suited for all tastes. The recipe makes two big waffles, so it might be even enough for 2 servings, depending on your hunger level.  🙂

 

What do you need?

  • 1 banana

  • 2 eggs

  • 1 scoop (= 25 grams) of protein powder

  • 5 grams of melted butter / oil

  • 1/4 teaspoon of baking soda

  • a dash of cinnamon

 

How to make them?

First of all, get your waffle maker preheating to high heat.

Whisk up your eggs well. Add in the oil and mix again. Set that mixture aside.

Now it’s time to mash up the banana. I just use a fork and mash it on a cutting board. Add the banana to the egg mix and whisk again until the mix is smooth. Now add in the dry ingredients: protein powder, baking soda and cinnamon. Mix really well until there are no lumps in the batter.

Pour about half of your batter into your waffle maker and wait until the waffle looks golden brown and done. Repeat with the rest of the batter.

Serve with whatever you like: curd, sour cream, whipped cream, berries, nuts, nut butter or plain. I added some cocoa curd cream (kohupiimakreem kakaoga) and it was delicious.

 

What about nutrition?

The whole recipe (without toppings) is 425 kcal, 36 g of protein, 17 g of fat, 33 g of total carbs. Ratios: 31% carbs, 35% fat, 34% protein.

If you want to cut the fat content, use 3 egg whites instead of 2 whole eggs. Then it’s 316 kcal, 33 g of protein, 6 g of fat, 33 g of total carbs. Ratios: 41% carbs, 17% fat, 42% protein.
