Chocolate mug cake (inspired by Jess Paige’s LCHF)

I have been following Jess Paige’s LCHF on Instagram for a while now and recently I started following her blog aswell. She has some pretty amazing recipes out there! This mug cake I’m going to share with you is inspired by this recipe.

In the original recipe no protein powder is used, she used coconut flour. Since I have yet to find coconut flour, I had to make a substitution.

The recipe makes one big mugcake.

 

What do you need?

  • 1 egg

  • 10 g of cream cheese (softened) / sour cream

  • a pinch of baking soda

  • 5 g of dark cocoa powder

  • 10 g of butter (softened) / oil

  • 25 g of protein powder

  • water

  • a pinch of cinnamon, cardamom, sweetener etc (to your personal liking)

  • microwave oven

 

How to make it?

Take a big mug and mix all the ingredients in the mug well. Leave water for last, add as much or as little as you need to get the batter to normal cake batter consistency. Now cook in the microwave for 1,5–2 minutes. Do not over cook it, then the cake becomes rubbery. 1,5 minutes is fine with my protein  powder and microwave.
Enjoy! Feel free to add toppings like berries, peanut butter, sour cream, cream cheese etc but it’s also good plain.

 

What about nutrition?

The mug cake is 280 kcal, 30 g of protein, 3 g of carbs, 17 g of fat.

Breakfast (10.30 AM)

  • 2 large eggs

  • 30 g of cheese

  • 20 g of sour cream

  • 20 g of homemade mayonnaise (recipe here)

  • 2 slices of bacon

  • 1 small tomato

Unfortunately I had no time for lunch so I had a bigger dinner instead.

 

Dinner (5 PM)

  • 4 minipizzas (recipe here)

  • 2 peanut butter protein balls (recipe coming soon)

  • 100 g of ricotta

  • 20 g of sour cream

  • dark cocoa powder

 

Snacks during the day

  • some cheese

  • 1 teaspoon of coconut oil

  • 2 tiny pieces of pork (while cooking for my family)

 

Nutrition facts

 

In total about 1700 kcal.
