Oopsie-bread minipizzas

These little minipizzas are one of the best meals I have had on LCHF. I might have overbaked my pizzas just a little bit (I was cooking 3 things at once and forgot I had them in the oven) but they still taste AMAZING. 

If you want to, you can for sure make this as a big pizza not individual mini pizzas but I personally hate cutting pizza since the cheese will come off and stick to my knife so I made minipizzas.

What do you need?

For the base:

  • 3 eggs, separated

  • pinch of salt

  • pinch of baking powder

  • 100 grams of cream cheese, at room temperature

For the topping:

  • 450 grams of minced meat (I used turkey since I had that in the fridge)

  • salt and pepper

  • dried basil and oregano

  • a little bit of oil

  • 200 grams of grated cheese

  • 60 g of tomato sauce / ketchup (I used Felix’s no sugar added ketchup, 10 g of carbs per 100 grams)

 

How to make them?

First of all get your oven preheating to 150C. Heat up your pan and fry the minced meat with a little salt and pepper in some oil.

When the meat is done, set that aside. Next take your ketchup and dried herbs and mix them together. In my opinion the tomato sauce is key in getting a real pizza feeling.

Now it’s time to make the oopsie bases. While you are making this, the meat has time to cool down and the sauce time to infuse all the flavours. Separate the eggs. Into the bowl with the yolks add the cream cheese and baking powder. Then mix them together, I used a spatula for that. Make sure everything is well mixed together.

Next I put a pinch of salt into the egg whites and beat them into stiff peaks with my electric mixer.

Now gently fold the two together.

Next I divided the batter into 12 little mountains. Make sure you use wax paper / baking paper because they will stick on the pan terribly if you don’t. 

Bake oopsies in a 150C oven for 30 minutes. They will look something like that:

This time mine turned out pretty flat, not as great as usually. The reason is that I had something else creating moisture in the oven while baking them. I suggest you don’t have anything else in the oven while baking oopsie bread, then they will be fluffier.

Now turn the oopsie bases over. It’s not that necessary but I think that way it’s more comfortable to lay the toppings on.

Now spread on the ketchup and minced meat.

And add lots of cheese. I love the cheesey part the most.

Bake in the oven (maybe at 200C) until the cheese has melted and turned a little golden. I overbaked mine but they are still fine.

What about nutrition facts?

The whole recipe is 1894 kcal, 178 g of protein, 127 g of fat and 11 g of carbs. It will be more nutritious and fatty and ketogenic diet friendly if you use pork.

If divided into 12 minipizzas, one pizza is 158 kcal, 15 g of protein, 11 g of fat, 0,92 g of carbs.

 

Any further recommendations?

If you don’t want them as low in carbs, add a slice of tomato on each one. This will make them even yummier. Also feel free to add any other toppings you want.
